What You’ll Need

  • 1 (946 ml)  plain Mount Olympus Pure Foods Greek Goat Kefir
  • 3/4 tsp kosher salt
  • Cheesecloth
  • Strainer
  • Bowl

Instructions

  1. Combine Ingredients: Pour the Greek goat kefir into a medium-sized bowl, add the salt, and mix well.

  2. Prepare for Straining: Line another medium-sized bowl with cheesecloth, then pour the salted yogurt mixture into the lined bowl.

  3. Create a Bundle: Gather the corners of the cheesecloth and tie them together, forming a small bundle.

  4. Strain: Place the bundle in a strainer and set it over a bowl to catch any excess liquid.

  5. Chill: Refrigerate for 4 to 12 hours (or overnight), depending on your desired thickness.

  6. Serve: Once the cheese has formed, remove it from the cheesecloth and enjoy it as a delicious topping for pasta or as a spread on crostini for a delightful appetizer.
